TVP Sloppy Joes!

I had a craving for sloppy joes this week and I found this recipe from Hell Yeah It’s Vegan! (which is an awesome blog name and an awesome blog. Check it out.) and we had most of what was needed at home already. I love when that happens. I changed it a bit so I’ll include the recipe here. These were honestly the best sloppy joes I’ve ever had and they are going to be showing up for dinner a lot at our house.

TVP Sloppy Joes

1 Tbsp oil (I used canola)
1 medium onion, diced (I used red onion, but use what you want)
1 green bell pepper, diced
1 tsp minced garlic
2 tsp chili powder
1 tsp prepared mustard
1 1/4 c TVP
1 1/2 c water
3/4 c ketchup
1 Tbsp soy sauce
salt and pepper to taste
soft sandwich buns

In a large saucepan over medium heat, heat the oil and saute the onion, pepper and garlic until the onion is translucent.Add chili powder and mustard and stir well.

Add TVP, water and ketchup. Bring to boil and cover. Reduce heat and let simmer for 10 minutes, until most of the liquid has been absorbed by the TVP.

Season with salt & pepper to taste.
Serve hot on the soft buns. We put Earth Balance on the buns too.. This recipe made enough for 6 Sloppy Joes. We only had 4 buns so we had 2 each then ate the left over sloppy joe mix stright up with a fork!
