So, you might have already read my little rant about Starbucks and soymilk. Lately I’ve been just drinking the office coffee with soy creamer, but I wanted to try something a little different. I saw this recipe for a homemade pumpkin spice latte and decided to veganize it. My cousin gave me an espresso maker years ago so I brought it out and dusted it off for this special treat.


Pumpkin Spice Latte

1 cup vanilla soy milk
3 tbsp canned pumpkin
2 tsp granulated sugar, or to taste
1/4 tsp pumpkin pie spice blend (recipe at bottom if you don’t have any handy, like me)
1 shot hot, brewed espresso or 1/4 cup (60 mL) strong, brewed coffee

In small or medium saucepan over medium heat, whisk soy milk, pumpkin and sugar until steaming. Remove from heat. Stir in pumpkin pie spice. Whisk in espresso or coffee. Pour into large mug. If desired, top with vegan whipped cream and sprinkle with pumpkin pie spice, nutmeg or cinnamon. This make 1 latte.

Pumpkin Pie Spice Blend

1/2 teaspoon ground cinnamon
1/4 teaspoons ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
