I am part of the VegNews Magazine 2013 Street Team. I’m considered a “veteran” since I was also on the 2012 Team. In our Facebook group, we have little contests each month. February’s contest is posting original recipes with photos using the special ingredient and the this mont it’s CHOCOLATE!
I decided to make some No-Bake Drop cookies for the contest. They’re really quick and easy! Plus you probably have most of the ingredients at home already (if you’re regular bakers like Chad and I).
Chocolate No-Bake Coconut Oatmeal Drops
2 cups sugar
1/2 cup coconut creamer/milk (like So Delicious)
1 tsp vanilla
1/2 cup Earth Balance
1/2 cup cacao powder (use cocoa powder if that’s what you have.)
1 cup unsweetened, shredded coconut
3 cups quick oatmeal
In a medium pot, mix and heat sugar, creamer, vanilla, and Earth Balance and bring to a boil.m Boil for 3 minutes only. Remove the pot from the stove.
Mix in remaining ingredients. Drop by spoonful onto cookie sheet covered with parchment paper. Put in fridge until cooled. Eat and enjoy!
